Tacos on a Stick (Grilled, Juicy & Fun to Serve)

If you’re looking for a fun, crowd-pleasing twist on classic tacos, these Tacos on a Stick are guaranteed to be a hit. Juicy marinated beef, colorful vegetables, and smoky grilled flavor all come together on skewers that are perfect for outdoor grilling, summer parties, or casual family dinners.

Ingredients
  

  • 1 packet taco seasoning about 30 g
  • 240 ml tomato juice
  • 30 ml canola oil
  • 900 g beef top sirloin steak cut into 2.5 cm (1-inch) cubes
  • 1 medium green bell pepper about 150 g, cut into chunks
  • 1 medium sweet red bell pepper about 150 g, cut into chunks
  • 1 large onion about 200 g, cut into wedges
  • 16 cherry tomatoes about 200 g

Optional for Serving

  • Salsa con queso
  • Sour cream

Instructions
 

Prepare the marinade

  • In a large shallow dish, combine the taco seasoning, tomato juice, and canola oil. Mix well until fully blended.
  • Reserve 120 ml (½ cup) of the marinade for basting and refrigerate it.

Marinate the beef

  • Add the beef cubes to the remaining marinade and turn to coat evenly. Cover and refrigerate for at least 5 hours, or overnight for maximum flavor.

Assemble the skewers

  • Drain and discard the marinade from the beef.
  • Thread the beef, green pepper, red pepper, onion, and cherry tomatoes alternately onto metal skewers or soaked wooden skewers.

Grill

  • Preheat the grill to medium heat.
  • Place the skewers on the grill, uncovered, and cook for about 3 minutes per side. Baste with the reserved marinade while grilling.
  • Continue turning and basting until the beef reaches your desired doneness, about 8–10 minutes total.

Serve

  • Remove the skewers from the grill and serve hot. If desired, serve with salsa con queso or sour cream on the side for dipping.
