- 2 cups cooked chicken diced or shredded
- rotisserie chicken works perfectly
- 1¾ cups enchilada sauce divided
- 1 cup shredded Mexican-blend cheese divided
- 8 small corn tortillas 15 cm / 6-inch

Layer the casserole
Place 4 corn tortillas in the bottom of the dish, tearing or overlapping them as needed to fully cover the base.
Top with half of the chicken mixture, then drizzle with ¼ cup enchilada sauce.
Repeat the layers once more:
