Easy Cabbage Tofu Stir-Fry (Vegan, High-Protein & Ready in 15 Minutes)

Ingredients
  

  • 180 g smoked tofu
  • 4 cups cabbage chopped
  • 1 carrot chopped
  • 1 mushroom chopped
  • ½ small onion thinly sliced
  • 3 garlic cloves minced
  • 1 tbsp fresh ginger thinly chopped
  • 1 tsp crushed red pepper
  • 1 tbsp tamari sauce
  • 1 tbsp olive oil

Instructions
 

Prep Everything

  • Wash and chop all vegetables.
  • Slice tofu into thin strips or cubes.
  • Mince garlic and slice ginger.

Sauté the Mushrooms

  • Heat a nonstick pan over medium heat.
  • Add olive oil and sauté mushrooms for about 2 minutes while stirring.
  • Push mushrooms to the side.

Brown the Tofu

  • Add sliced tofu to the pan.
  • Cook for about 2 minutes per side until golden brown.
  • Sprinkle with crushed red pepper if desired.

Add Aromatics

  • Stir in onion and ginger.
  • Cook briefly until fragrant.

Finish the Stir-Fry

  • Add garlic, cabbage, carrot, and tamari sauce.
  • Cook for about 5 more minutes, stirring occasionally, until vegetables are tender but not overcooked.
