Easy Cabbage Tofu Stir-Fry (Vegan, High-Protein & Ready in 15 Minutes)

- 180 g smoked tofu
- 4 cups cabbage chopped
- 1 carrot chopped
- 1 mushroom chopped
- ½ small onion thinly sliced
- 3 garlic cloves minced
- 1 tbsp fresh ginger thinly chopped
- 1 tsp crushed red pepper
- 1 tbsp tamari sauce
- 1 tbsp olive oil
Prep Everything
Wash and chop all vegetables.
Slice tofu into thin strips or cubes.
Mince garlic and slice ginger.
Sauté the Mushrooms
Heat a nonstick pan over medium heat.
Add olive oil and sauté mushrooms for about 2 minutes while stirring.
Push mushrooms to the side.
Brown the Tofu
Add sliced tofu to the pan.
Cook for about 2 minutes per side until golden brown.
Sprinkle with crushed red pepper if desired.
Finish the Stir-Fry
Add garlic, cabbage, carrot, and tamari sauce.
Cook for about 5 more minutes, stirring occasionally, until vegetables are tender but not overcooked.
