1cup canned black beansrinsed and drained, divided

cheddar, Colby Jack, or similar
Instructions
Preheat the oven
Preheat your oven to 177°C
(= 350°F)
Cook the beef
Heat an oven-safe pan over medium-high heat. Add the ground beef and cook, breaking it up into crumbles, until fully cooked and no longer pink.
Drain excess fat and transfer the beef to a bowl.
Add BBQ sauce
Pour ½ cup of the BBQ sauce over the cooked beef and stir until evenly coated. Set aside the remaining ¼ cup BBQ sauce for layering.
Prepare the pan
Wipe out the pan and lightly grease it with cooking spray.
(If your pan isn’t oven-safe, use a greased baking dish instead.)
Place one tortilla in the bottom of the pan and brush the top with some of the reserved BBQ sauce.
First layer
Spread half of the BBQ beef evenly over the tortilla.
Scatter ½ cup black beans on top and gently press them into the beef.
Sprinkle about ⅓ cup shredded cheese evenly over the layer.
Second layer
Brush one side of the second tortilla with BBQ sauce and place it sauce-side down over the beef. Brush the top side with more BBQ sauce.
Spread the remaining beef evenly over the tortilla, then scatter the remaining ½ cup black beans and another ⅓ cup shredded cheese.
Final layer
Brush one side of the last tortilla with BBQ sauce and place it sauce-side down on top. Brush the top with more BBQ sauce, adding extra if you like it saucy.
Sprinkle the remaining ⅓ cup cheese evenly over the top.
Bake
Place the pan in the oven and bake for 15 minutes at 177°C, or until the cheese is fully melted and bubbly.
Remove from the oven and let the pie rest for 5 minutes before slicing into quarters and serving.
